Module Overview
This training module prepares candidates to deliver high-quality dining experiences across fine dining, casual restaurants, banquets, and hotel food service environments. Trainees will master dining room setup, step-by-step service sequences, tray handling, upselling techniques, dietary awareness, and guest dispute resolution.
Module Breakdown
Section 1: Professional Grooming, Hygiene & Dining Room Setup
- Personal Presentation & Hygiene: Uniform standards (pressed linen, clean apron, polished non-slip shoes), personal hygiene, hair restraint, minimal jewelry, and unfragranced grooming.
- Service Station Preparation (Mise en Place):
- Polishing glassware, silverware, and chinaware using hot water/steam and lint-free microfiber cloths.
- Stocking side stations with napkins, cutlery, condiments, tray stands, and order pads.
- Table Setting Standards:
- Casual Dining: Basic napkin fold, dinner fork (left), dinner knife and side plate (right), water glass (above knife).
- Formal / Fine Dining: Multi-course cutlery layout (outside-in rule), butter knife on bread plate, wine glasses positioned in order of service.
- Banquet Setup: Uniform table alignment, napkin folds, centerpieces, and chair spacing.
Section 2: The Guest Service Sequence & Table Mechanics

- Greeting & Seating: Welcoming guests within 30 seconds of arrival, assisting with seating (pulling chairs out for guests), and presenting menus open to the first page.
- Order Taking & POS Entry:
- Writing orders using pivot point seat numbering (Seat 1, Seat 2 clockwise) to avoid “auctioning” food upon delivery.
- Capturing special cooking requests (e.g., steak doneness levels) and dietary restrictions accurately.
- Entering orders into the Point of Sale (POS) system with clear course timing modifiers.
- Food & Beverage Delivery Mechanics:
- Serving food from the left of the guest using the left hand.
- Serving beverages from the right of the guest using the right hand.
- Clearing used plates from the right of the guest.
Section 3: Tray Service, Carrying Techniques & Clearing
- Drink Tray Balance: Carrying beverage trays on the fingertips of the left hand at shoulder height; balancing heavy items in the center and unloading from the perimeter.
- Plate Carrying Techniques:
- Two-Plate Hold: Standard carry using thumb and index finger for the first plate, supporting the second on the lower fingers and wrist.
- Three-Plate Hold: Advanced carry positioning two plates on the left hand/forearm and the third in the right hand.
- Crumbing & Clearing (Busboy Protocols):
- Clearing tables between courses using silent service techniques.
- Crumbing the table surface before presenting the dessert menu.
- Carrying dirty chinaware to the dishwashing area using separate stacking methods (separating food waste, cutlery, and plates).
Section 4: Menu Knowledge, Upselling & Dietary Awareness
- Describing Menu Items: Using descriptive culinary terms (e.g., seared, pan-roasted, infused, locally sourced) to highlight flavor profiles and textures.
- Upselling & Suggestive Selling:
- Recommending specific appetizers, beverage pairings, or premium side dishes rather than asking open-ended questions.
- Suggesting post-meal coffees, digestifs, or signature desserts.
- Allergen & Dietary Safety:
- Identifying major food allergens (peanuts, tree nuts, dairy, eggs, wheat/gluten, soy, fish, shellfish, sesame).
- Communicating dietary allergies directly to the kitchen chef and flagging orders in the POS system to prevent cross-contamination.
Section 5: Guest Relations, Dispute Resolution & Cash Handling
- Handling Complaints (The LAST Method):
- Listen: Allow the guest to explain the issue without interruption.
- Apologize: Express genuine empathy for the disappointment.
- Solve: Offer an immediate solution (e.g., refiring a dish, offering an alternative).
- Thank: Thank the guest for bringing the matter to your attention.
- Bill Presentation & Payment Processing:
- Checking the bill accuracy before presentation in a clean check presenter.
- Processing credit cards, cash payments, and room charges professionally and securely.
